Snickerdoodles

Makes Approx. 48 Cookies

  • 1 cup butter, softened
  • 1 1/2 cups vanilla sugar & cinnamon
  • 2 eggs
  • 2 tsp vanilla essence
  • 2 cups plain flour
  • 3/4 cup self raising flour
  • 1/4 tsp salt
  • 1/2 cup water
  • 4 tbsp vanilla sugar & cinnamon
  1. Preheat oven to 200C
  2. Cream together the butter, sugar, eggs and vanilla essence.
  3. Blend in the flour and salt.
  4. Place the extra 4 tbsp sugar in a shallow dish. Shape the cookie dough into balls and using a teaspoon and roll in sugar.
  5. Place 4cm apart on baking trays lined with greaseproof/baking paper.
  6. Bake 10 mins or until set and lightly golden but no too hard. Remove from baking sheets to cool on cooling racks immediately.
