Snickerdoodles
Makes Approx. 48 Cookies
- 1 cup butter, softened
- 1 1/2 cups vanilla sugar & cinnamon
- 2 eggs
- 2 tsp vanilla essence
- 2 cups plain flour
- 3/4 cup self raising flour
- 1/4 tsp salt
- 1/2 cup water
- 4 tbsp vanilla sugar & cinnamon
- Preheat oven to 200C
- Cream together the butter, sugar, eggs and vanilla essence.
- Blend in the flour and salt.
- Place the extra 4 tbsp sugar in a shallow dish. Shape the cookie dough into balls and using a teaspoon and roll in sugar.
- Place 4cm apart on baking trays lined with greaseproof/baking paper.
- Bake 10 mins or until set and lightly golden but no too hard. Remove from baking sheets to cool on cooling racks immediately.
